Time to improvise!!!

A friend of mine told me about this amazing food blog, I drooled just by looking the pictures and eager to cook something, anything! It's been a while since I crashed the kitchen, I missed the chopping, the sizzling sound, the house filled with great smell of my own cooking, and of course the eating part hehehe

I jumped from 1 pictures to another and suddenly I stopped at this recipe. The ingredients remind me of my simple thai salad dressing; vinegar, olive oil, cilantro, chili, and sugar. While chimichurri has more ingredients like parsley, garlic, cumin and red wine vinegar.
Chimichurri...
Chimichurri...
Chimichurri...
The name is so cute and funny and I decided to mix this chimichurri with my thai salad dressing. Tossed away the cumin and red wine vinegar :D

I was guessing it will taste delicious with seafood; clams, fish, or maybe shrimp. At the market, I saw mint leaves. Then it hit me. Couscous!!! Couscous with grilled shrimp. Drizzle them with the mixed dressing and it will be fabulous! Please don't be surprise with my fusion cooking hihihi I love to mix and hopefully it can be a match ;p

This is how to make the couscous:
1 cup of couscous
1 cup of hot water (or chicken stock)
1-2 tbsp of olive oil
1/4 cup of diced red bell pepper
1/4 cup of diced yellow bell pepper
1/4 cup of raisin (soaked them in a bowl of 1 lemon juice)
1-2 tbsp of chopped mint leaves
1 tsp of salt

1. Heat some water in a sauce pan and then put heat proof bowl on top of it. In the heat proof bowl, add the couscous then pour over the hot water and olive oil.
2. Stir until it become fluffy.
3. Add all the other ingredients to the couscous and mix well.
4. You can always add water, lemon juice, or olive oil if you think the couscous not fluffy enough :D

And this is how to make the mixed dressing (can I called it thaimichurri?)
1/2 cup vinegar
2 tbsp olive oil
3-4 tbsp sugar
1 cup parsley
1/2 cup cilantro
3 garlic cloves
2 chilly

1. Bring the olive oil, vinegar and sugar to boil. Let it cool.
2. Put the rest of the ingredients to blender.
3. Mixed all.

And for the shrimp and fish, give a little bit of garlic powder and salt before pan fried or grilled them. Served with a little drop of lemon juice on top of them.

To my surprise, the sweet smell from minty couscous and the salty seafood tasted great with sweet and sour dressing. It's a match!!!
*happy octopus dance* ~(^o^)~
Even my mum couldn't wait until lunch time to eat them.

  2. That's one serious food blog. I love the how-to-cook video! \(^o^)/
Couscous is one kind of grainy dish, maybe the same as rice(?).
First time I tried it was at Bali, in some kind of Moroccan restaurant then learned to cook it at the Culinary School hihihi
